Ingredients:
- 1/4 cup diced onion
- 1/4 cup minced garlic
- 1/4 cup diced red bell pepper
- 2 tablespoons olive oil
- 1/4 cup diced jalapeno pepper
- 1/4 cup diced red chilli pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 cup tomato paste
- 1/4 cup apple cider vinegar
- 2 tablespoons honey
- 1/4 cup packed brown sugar
Instructions:
In a large skillet over medium heat, heat the olive oil and add the onion, garlic, bell pepper, jalapeno, and red chilli pepper. Saute for about 7 minutes, or until the vegetables are softened. Add the cumin, smoked paprika, sea salt, and black pepper, and stir to combine. Cook for another minute or two, stirring frequently.
Add the tomato paste, apple cider vinegar, honey, and brown sugar. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the mixture is thick and jam-like. Remove from heat and let cool.
Transfer the chilli jam to a jar or container and store in the fridge for up to two weeks. Enjoy it as a dip with chips or crackers, or use it as a spread on sandwiches and burgers.
