Ingredients

This delicious pasta dish is a perfect midweek meal for the family. To make Spaghetti Alla Puttanesca Jamie Oliver you will need: 400g spaghetti, 4 tablespoons extra virgin olive oil, 4 cloves garlic (crushed or finely chopped), 2 anchovy fillets, 500g ripe tomatoes (or passata), 1 teaspoon dried chilli flakes, 1 teaspoon sugar, 20 black olives (stoned and halved), 2 tablespoons capers, 1 handful fresh flat-leaf parsley (finely chopped), sea salt and black pepper.

Instructions

Start by bringing a large pan of salted water to the boil. Then add the spaghetti and cook for 8-10 minutes, or according to packet instructions. While the spaghetti is cooking, heat 2 tablespoons of the extra virgin olive oil in a large non-stick frying pan. Add the garlic and anchovies and gently fry for a few minutes. When the garlic is golden and the anchovies start to break down, add the tomatoes, chilli flakes and sugar. Simmer everything together for 10-15 minutes, stirring occasionally, until the sauce thickens.

When the spaghetti is cooked, drain it and add it to the frying pan with the sauce. Add the remaining olive oil, the olives, capers and parsley. Give everything a good stir and cook for a couple of minutes more. Taste and season with salt and pepper, if needed. Serve the spaghetti in bowls and enjoy!
