Mumbai Street Style Vada Pav Recipe
Mumbai style Vada Pav is one of the most popular street foods of India. This delicious snack is a must-try for any visitor to the city. This scrumptious snack is made with spicy mashed potatoes, fresh-baked buns, and a variety of chutneys. It is a perfect snack for any time of the day and can be served as an appetizer or as a main course.
Ingredients
For the Vada:
* 2 cups of potatoes, peeled and diced
* 1 teaspoon of cumin seeds
* 2 tablespoons of oil
* 1 teaspoon of mustard seeds
* 2 tablespoons of chopped green chillies
* 2 tablespoons of chopped cilantro
* Salt and pepper to taste
For the Buns:
* 2 cups of all-purpose flour
* 2 teaspoons of sugar
* 1 teaspoon of active dry yeast
* 1 teaspoon of salt
* 1 tablespoon of oil
* 2/3 cup of warm water
For the Chutneys:
* 2 tablespoons of tamarind paste
* 1/4 cup of jaggery
* 1 teaspoon of cumin powder
* 1/2 teaspoon of red chilli powder
* 1/2 teaspoon of coriander powder
* Salt to taste
Instructions
For the Vada
1. Boil the diced potatoes in a pot of water until they are soft.
2. Drain the potatoes and mash them with a fork.
3. Heat the oil in a pan, add the cumin seeds and mustard seeds.
4. Once they start to splutter, add the mashed potatoes, chillies, cilantro, salt and pepper.
5. Mix everything together and cook for a few minutes.
6. Take off the heat and shape the mixture into small round balls.
7. Heat some oil in a pan and shallow fry the vada until golden brown.
For the Buns:
1. In a bowl, mix together the flour, sugar, yeast, salt, and oil.
2. Slowly add in the warm water and mix until a dough forms.
3. Knead the dough for 10 minutes.
4. Place the dough in a greased bowl and cover with a damp cloth.
5. Leave the dough to rise for 1 hour.
6. Once the dough has doubled in size, knead it for a few minutes.
7. Divide the dough into 12 equal portions.
8. Shape each portion into a round bun and place them on a greased baking sheet.
9. Brush the buns with some oil and bake in a preheated oven at 375°F for 15 minutes.
For the Chutneys:
1. In a pan, add the tamarind paste and jaggery.
2. Cook over medium heat for 10 minutes.
3. Add the cumin powder, red chilli powder, coriander powder, and salt.
4. Cook for another 5 minutes until the mixture thickens.
5. Take off the heat and set aside.
Assembly
1. Slice the buns in half and lightly toast them.
2. Spread the chutneys on each half of the buns.
3. Place the vada in the middle and close the bun.
4. Serve the Vada Pav with some extra chutney.
