Malai Kofta Veg Recipes Of India
Malai Kofta is one of the most popular vegetarian dishes in India. This creamy and flavorful dish is made up of mashed vegetables and paneer (Indian cheese) balls, served with a rich and creamy gravy. Ingredients
For the Kofta:
• 1 cup boiled potatoes
• 1/2 cup grated paneer
• 1/4 cup chopped cashews
• 1/4 cup chopped raisins
• 1/4 cup chopped coriander leaves
• 2 green chillies, finely chopped
• 2 teaspoon grated ginger
• 1 teaspoon garam masala powder
• 1 teaspoon red chilli powder
• Salt to taste
• Oil for deep frying
For the gravy:
• 2 tablespoons oil
• 2 bay leaves
• 1 teaspoon cumin seeds
• 2 teaspoon ginger-garlic paste
• 2 onions, finely chopped
• 2 tomatoes, finely chopped
• 1 teaspoon coriander powder
• 1 teaspoon cumin powder
• 1/2 teaspoon red chilli powder
• 1/2 cup thick coconut milk
• 1/2 cup low-fat cream
• Salt to taste
• 1 teaspoon garam masala powder
• 2 tablespoons chopped coriander leaves
Instructions
Making the Koftas
1. In a bowl, add potatoes, paneer, cashews, raisins, coriander leaves, green chillies, ginger, garam masala powder, red chilli powder and salt. Mix everything together.
2. Divide the mixture into equal portions and shape them into round balls.
3. Heat oil in a pan on medium heat. Fry the koftas till golden brown. Keep aside.
Making the gravy
1. Heat oil in a pan on medium heat. Add bay leaves and cumin seeds and sauté for a few seconds.
2. Add ginger-garlic paste and fry for a few seconds.
3. Add onions and fry till they turn golden brown.
4. Add tomatoes and fry till they turn soft and mushy.
5. Add coriander powder, cumin powder, red chilli powder and salt. Fry for a few seconds.
6. Add coconut milk and cream. Simmer for 5-7 minutes.
7. Add koftas and garam masala powder. Simmer for a few minutes.
8. Add coriander leaves and switch off the heat.
Serving the dish:
Malai Kofta is best served with steamed basmati rice or naan. You can also serve it with chapatis or parathas.

Malai Kofta is a rich and creamy dish, so it's not the healthiest option. However, it is high in protein and fibre, thanks to the paneer and vegetables. It also contains some healthy fats from the coconut milk and cream, and vitamins and minerals from the vegetables.
