Easy Chocolate Crepe Cake Recipe

Ingredients
- For the crepes:
- 2 cups all-purpose flour
- 2 cups milk
- 4 large eggs
- 2 tablespoons melted butter
- 1/2 teaspoon salt
- For the chocolate cream filling:
- 1 cup semisweet chocolate chips
- 1/4 cup heavy cream
- 1/4 cup butter, softened
- For the chocolate ganache topping:
- 1/2 cup semisweet chocolate chips
- 3 tablespoons heavy cream
Instructions
Making the Crepes
The first step in making a crepe cake is to make the crepes. In a medium bowl, whisk together the flour, milk, eggs, melted butter, and salt. Whisk until the batter is smooth, with no lumps. Let the batter rest for 15 minutes.
Heat a nonstick skillet over medium heat. Grease the skillet with a little butter or cooking spray. Once the skillet is hot, pour about 1/4 cup of the crepe batter into the skillet, tilting the skillet to spread the batter out evenly. Cook for about 2 minutes, until the crepe is lightly browned. Flip the crepe with a spatula and cook for another 1-2 minutes until lightly browned. Transfer the crepe to a plate and repeat with the remaining batter.
Making the Chocolate Cream Filling
In a medium heat-proof bowl, combine the chocolate chips, heavy cream, and butter. Place the bowl over a pot of simmering water and stir until the chocolate chips and butter are melted and the mixture is smooth. Remove the bowl from the heat and let cool to room temperature.
Assembling the Cake
Place one of the crepes on a cake stand or platter. Spread a layer of the cooled chocolate cream over the crepe. Place another crepe on top of the cream and press down lightly. Repeat this process with the remaining crepes and cream. Once all of the crepes and cream have been layered, spread the remaining cream over the top of the cake.
Making the Chocolate Ganache Topping
In a medium heat-proof bowl, combine the chocolate chips and heavy cream. Place the bowl over a pot of simmering water and stir until the chocolate chips are melted and the mixture is smooth. Remove the bowl from the heat and let cool slightly. Pour the ganache over the top of the cake, using a spatula to spread it out evenly.
Serving the Cake
Let the cake cool completely before serving. The cake can be served at room temperature or chilled. Sprinkle with chopped nuts or shaved chocolate, if desired. Enjoy!
