Ingredients

Instructions
To start, soak the urad dal in water for at least 4 hours. After it is completely soaked, drain the water and grind the lentils into a smooth paste. Add the cumin seeds, garlic, ginger, red chilli powder, turmeric powder, garam masala powder, chaat masala, coriander leaves, sugar, and salt to the paste, and mix it all together. Heat some oil in a pan and spoon the mixture into the pan. Fry the vadas until they turn golden brown. Once the vadas are cooked, remove them from the oil and drain the excess oil. Place the vadas in a bowl of cold water and let them soak for a few minutes. This helps to soften the vadas and make them easier to shape. Remove them from the water and shape them into round discs.
Meanwhile, mix the yogurt with the chopped mint leaves and set aside. Heat some oil in a pan for deep frying. Fry the vada discs until they turn golden brown. Remove them from the oil and drain the excess oil. Place the fried vadas into the yogurt mixture and let them soak for about 10 minutes. This helps to give the vadas a creamy texture.
To serve, place the vadas on a plate and top them with some extra yogurt and chopped coriander leaves. Serve the dahi vadas immediately, while they are still hot. Enjoy!
