  • 6 tablespoons butter, melted

  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips for garnish

Instructions

To make the crust, preheat the oven to 350°F. Place the Oreos in a food processor and pulse until they are fine crumbs. In a medium bowl, combine the Oreo crumbs and melted butter and stir until the mixture is evenly moistened. Press the mixture into a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and allow to cool completely.

In a large bowl, beat the heavy cream, sugar, and vanilla extract until stiff peaks form. Set aside. In a medium saucepan, combine the chocolate chips, corn syrup, and salt. Heat over low heat until the chocolate has melted and the mixture is smooth. Allow to cool slightly, then fold into the whipped cream.

Spread the chocolate mousse evenly over the cooled crust. Place the cake in the refrigerator to chill for at least two hours. To serve, run a knife around the edge of the pan and release the sides. Top with additional chocolate chips, if desired. Enjoy!
