Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup arborio rice
- 1/2 cup dry white wine
- 4 cups chicken broth
- 1/2 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup fresh mushrooms, sliced
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook, stirring often, until the onion is softened, about 5 minutes. Add the arborio rice and stir to coat with the oil. Cook for 1 minute more.
Add the white wine and stir until it's fully absorbed. Add the chicken broth, one cup at a time, stirring until it's fully absorbed before adding the next cup. Once all the broth is added, reduce the heat to low and cover the pan. Cook for 15 minutes.
Uncover the pan and add the chicken, mushrooms, and Parmesan cheese. Stir until the cheese is melted and everything is combined. Cover the pan and cook for an additional 10 minutes. Uncover the pan and add the parsley. Stir to combine and serve.
