Ingredients

  • 3 tablespoons of ghee (clarified butter)

  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala

  • 1 teaspoon salt
  • 2 cups mixed vegetables (carrots, beans, peas, potatoes)
  • 1 cup coconut milk
  • 2 tablespoons chopped fresh coriander leaves

Instructions

To begin, rinse the rice until the water runs clear and then soak it in water for 30 minutes. This will help to soften the rice and make it easier to cook.

In a large pot, heat the ghee over medium-high heat. Add the onions, garlic, and ginger and sauté until the onions are lightly browned. Add the cumin seeds, turmeric powder, coriander powder, garam masala, chilli powder, and salt, and stir to combine. Add the vegetables and stir to combine.

Add the drained rice and stir to combine. Pour in the coconut milk and enough water to cover the rice by 1 inch. Bring the mixture to a boil, reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through.

Once the rice is cooked, turn off the heat and fluff the rice with a fork. Stir in the chopped coriander leaves and serve the ghee rice and vegetable kurma with your favourite accompaniment.
