To make this classic dish, you will need: 1kg of large prawns, peeled and deveined; 2 tablespoons of vegetable oil; 2 medium onions, finely chopped; 3 cloves of garlic, minced; 1 teaspoon of ground turmeric; 1 teaspoon of ground cumin; 2 teaspoons of ground coriander; 2 teaspoons of ground ginger; 1 teaspoon of chilli powder; 2 tablespoons of tomato puree; 1 tablespoon of tamarind paste; 2 cups of coconut milk; 1 teaspoon of garam masala; 1 teaspoon of sugar; and 1 handful of fresh coriander leaves, finely chopped.

Instructions

To begin, heat the oil in a large saucepan over medium heat. Add the onions and garlic to the pan and sauté until the onions are softened and lightly browned. Then, add the turmeric, cumin, coriander, ginger, and chilli powder and cook for 1-2 minutes, stirring constantly. Next, add the tomato puree and tamarind paste, stirring to combine. Finally, add the coconut milk, garam masala, sugar, and fresh coriander leaves. Stir to combine and bring the mixture to a simmer.

Once the curry is simmering, add the prawns to the pan and cook for 5-7 minutes, stirring occasionally, until the prawns are cooked through. When the prawns are cooked, the curry is ready to serve. Serve the curry with steamed white rice and a side of naan bread.
