Ingredients
- 1/4 cup (60 ml) olive oil
- 4 cloves garlic, minced
- 2 leeks, white and light green parts only, finely chopped
- 2 cups (500 ml) chicken stock
- 1/4 cup (60 ml) white wine
- 2 tablespoons (30 ml) chopped fresh thyme
- 3/4 cup (180 ml) heavy cream
- 1/2 cup (125 ml) freshly grated Parmesan cheese
- 1/2 teaspoon (2 ml) freshly ground black pepper
- 4 boneless, skinless chicken breasts, cut into 1-inch (2.5 cm) cubes
- 1 sheet frozen puff pastry, thawed
- 1 egg, beaten
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat. Add the garlic and leeks and cook, stirring occasionally, until softened, about 5 minutes.
- Add the chicken stock, white wine, and thyme and bring to a simmer. Cook until the liquid is reduced by half, about 5 minutes.
- Add the cream, Parmesan cheese, and pepper and stir to combine. Add the chicken and cook until the chicken is cooked through, about 5 minutes.
- Remove the skillet from the heat and let cool for 10 minutes.
- Line a 9-inch (23 cm) pie plate with the puff pastry. Pour the chicken mixture into the pastry and use a fork to press the edges together to seal.
- Brush the top of the pastry with the beaten egg and cut a few slits in the top for steam to escape.
- Bake the pie until the pastry is golden brown and the filling is bubbling, about 30 minutes.
- Let the pie cool for 15 minutes before serving.
