      Ingredients

      • 1/4 cup (60 ml) olive oil
      • 4 cloves garlic, minced
      • 2 leeks, white and light green parts only, finely chopped
      • 2 cups (500 ml) chicken stock
      • 1/4 cup (60 ml) white wine
      • 2 tablespoons (30 ml) chopped fresh thyme
      • 3/4 cup (180 ml) heavy cream
      • 1/2 cup (125 ml) freshly grated Parmesan cheese
      • 1/2 teaspoon (2 ml) freshly ground black pepper
      • 4 boneless, skinless chicken breasts, cut into 1-inch (2.5 cm) cubes
      • 1 sheet frozen puff pastry, thawed
      • 1 egg, beaten

      Instructions

      1. Preheat the oven to 375°F (190°C).
      2. Heat the olive oil in a large skillet over medium heat. Add the garlic and leeks and cook, stirring occasionally, until softened, about 5 minutes.
      3. Add the chicken stock, white wine, and thyme and bring to a simmer. Cook until the liquid is reduced by half, about 5 minutes.
      4. Add the cream, Parmesan cheese, and pepper and stir to combine. Add the chicken and cook until the chicken is cooked through, about 5 minutes.
      5. Remove the skillet from the heat and let cool for 10 minutes.
      6. Line a 9-inch (23 cm) pie plate with the puff pastry. Pour the chicken mixture into the pastry and use a fork to press the edges together to seal.
      7. Brush the top of the pastry with the beaten egg and cut a few slits in the top for steam to escape.
      8. Bake the pie until the pastry is golden brown and the filling is bubbling, about 30 minutes.
      9. Let the pie cool for 15 minutes before serving.
