Braised Red Cabbage with Balsamic Vinegar

Ingredients

For this delicious braised red cabbage with balsamic vinegar, you will need: 1 large red cabbage (about 3 lb or 1.4 kg), 1 large onion, 4 tablespoons of butter, 1/4 cup of balsamic vinegar, 1/4 cup of honey, 1/4 cup of vegetable stock, 1/2 teaspoon of black pepper, 1/2 teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg.

Instructions

To begin, preheat your oven to 350°F (175°C). Cut the cabbage into quarters and then remove the core. Slice the cabbage into thin strips and place it in a large baking dish. Peel and slice the onion into thin strips and add it to the cabbage. Melt the butter in a small saucepan over low heat, then add the balsamic vinegar, honey, vegetable stock, black pepper, cinnamon, and nutmeg. Stir until all the ingredients are combined, and then pour the mixture over the cabbage and onion.

Toss everything together to make sure that the cabbage and onion are evenly coated with the balsamic mixture. Cover the dish with a lid or aluminum foil and bake for about 1 hour, or until the cabbage is soft and tender. Uncover the dish and bake for another 15 minutes to allow the liquid to reduce and the cabbage to caramelize.

Once the cabbage is done, remove it from the oven and let it cool slightly before serving. This dish pairs well with roast chicken, steak, or pork chops. Enjoy!
