Anzac Biscuits - Women's Weekly Recipe

Anzac biscuits are a classic Aussie treat that everyone loves. This recipe from Women's Weekly is the perfect way to make them - crunchy on the outside and chewy on the inside. Whether you're making them for morning tea, a school bake sale, or just for a snack, you can be sure that you'll have a delicious batch of Anzac biscuits.

Ingredients:

- 1 cup plain flour
- 1/2 cup rolled oats
- 1/2 cup desiccated coconut
- 1/2 cup brown sugar
- 125g butter
- 2 tablespoons golden syrup
- 2 teaspoons bicarbonate of soda

Instructions:

1. Preheat the oven to 180°C and line two baking trays with baking paper.

2. In a large bowl, combine the flour, rolled oats, coconut and brown sugar.

3. In a saucepan over low heat, melt the butter and golden syrup together.

4. Once the butter has melted, add the bicarbonate of soda to the pan. Stir the mixture until it starts to foam.

5. Pour the butter mixture into the dry ingredients and mix until everything is combined.

6. Using a spoon, scoop out tablespoon-sized amounts of the mixture and roll them into balls. Place the balls onto the baking trays.

7. Bake in the oven for 15 minutes, or until golden brown. Allow to cool slightly before transferring to a wire rack to cool completely.

Nutrition:

Anzac biscuits are a great way to get a sweet hit but they're not always the healthiest option. Each biscuit contains approximately 93 calories, 4.8g of fat, 11.4g of carbohydrates and 1.1g of protein. They are also high in sugar, which can contribute to tooth decay if consumed in large amounts.

The best way to enjoy Anzac biscuits is in moderation - enjoy one or two with your morning tea or afternoon snack, rather than the whole batch!

Healthy Anzac Biscuits:

If you're looking for a healthier way to enjoy Anzac biscuits, try substituting some of the ingredients. Swap the butter for a dairy-free alternative, such as coconut oil, and use coconut sugar instead of brown sugar. You can also replace the rolled oats with quinoa flakes, and add some chopped nuts or dried fruit for an extra nutritional boost.

These changes will make the Anzac biscuits lower in fat and sugar, and higher in protein and fibre. They're still a treat, but much better for you!

Enjoying Anzac Biscuits:

Anzac biscuits are a delicious snack, but they can also be enjoyed in other ways. Try crumbling them over ice cream or yogurt for a crunchy topping, or use them to make a crumb crust for a tart or cheesecake. They can also be chopped up and added to muffins or cookies for a delicious twist.

No matter how you enjoy them, Anzac biscuits are sure to be a hit. Try this Women's Weekly recipe for the perfect batch of crunchy, chewy biscuits every time.
