Ingredients

  • 1 ½ lbs stewing steak, cut into bite-sized pieces

  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 2 tablespoons all-purpose flour
  • 1 ½ cups dark ale
  • 4 cups beef stock
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten
  • Salt and pepper, to taste

Instructions

Preheat the oven to 375°F. Heat the olive oil in a large skillet over medium-high heat. Add the steak pieces and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the steak is nicely browned. Remove the steak from the pan and set aside.

Add the onion, garlic, carrots, and celery to the pan. Cook for 8-10 minutes, stirring occasionally, until the vegetables are softened. Add the tomato paste, thyme, oregano, and bay leaves. Cook for 1 minute more, stirring to combine. Stir in the flour, then slowly pour in the ale, stirring constantly to combine.

Add the beef stock and bring to a boil. Reduce the heat to low, return the steak to the pan, and simmer for 20-25 minutes, stirring occasionally, until the sauce has thickened and the steak is tender. Remove from the heat and let cool slightly.

Line a 9-inch pie dish with the puff pastry. Spoon the steak and ale mixture into the dish. Cut a small slit in the top of the pastry. Brush the top with the beaten egg. Place the pie dish on a baking sheet and bake for 25-30 minutes, until the pastry is golden-brown.

Remove from the oven and let cool for 15 minutes before serving. Enjoy!
