No Bake Lotus Cheesecake Recipe
Lotus Cheesecake, a light and creamy dessert that is perfect for any occasion. This no bake recipe is simple, yet impressive and can be easily prepared in under an hour. Ingredients
- 200g Lotus Biscuits
- 3 tablespoons of butter
- 3 tablespoons of sugar
- 200g cream cheese
- 100ml double cream
- 2 tablespoons of sugar
- 2 tablespoons of cocoa powder
- 1 teaspoon of vanilla extract
- 100g melted dark chocolate
- 100g melted white chocolate
Instructions
Start by crushing the lotus biscuits into a fine crumb. Melt the butter in a small saucepan over a low heat and add the sugar. Once the sugar has dissolved, add the biscuit crumb and stir until well combined. Transfer the mixture to a 20cm springform cake tin and press down firmly using the back of a spoon. Place the tin in the fridge to set.
In a medium bowl, beat together the cream cheese, double cream, sugar, cocoa powder and vanilla extract until light and fluffy. Spread the mixture over the biscuit base and place in the fridge to chill for at least one hour.
Once the cheesecake has set, melt the dark and white chocolate in separate bowls in the microwave. Drizzle the melted chocolate over the top of the cheesecake and return to the fridge for 30 minutes or until set.
Serve the cheesecake chilled, topped with fresh cream and extra lotus biscuits. Enjoy!
