After that, add in the soaked rice and 2 cups of water. Increase the heat to high and bring the mixture to the boil. Once it starts boiling, reduce the heat to low and cover the pot with a lid. Simmer for 15-20 minutes, until the rice is cooked and the liquid has been absorbed. Remove the pot from the heat and let it stand for 5 minutes.
