Ingredients
Delia Smith's steak and kidney pie is a classic British dish that’s sure to satisfy your craving for comfort food. This dish is made with a mix of beef steak and lamb kidneys, which are cooked in a hearty gravy and then encased in a golden crispy puff pastry. To make this pie, you will need:
- 2 pounds beef steak, cut into cubes
- 1 pound lamb kidneys, cut into cubes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 2 tablespoons all-purpose flour
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried sage
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 puff pastry sheet
- 1 egg, beaten
Instructions
Start by preheating your oven to 375°F (190°C). Heat a large skillet over medium-high heat and add the cubed steak, stirring occasionally until the steak is browned. Remove the steak from the skillet and set aside. Add the cubed kidneys to the same skillet and cook until lightly browned. Once the kidneys have finished cooking, remove them from the skillet and set aside.
In the same skillet, add the diced onion and garlic and sauté until softened. Add the Worcestershire sauce, flour and tomato paste and cook for a few minutes, stirring constantly. Slowly pour in the beef broth, stirring gently to combine. Add the cooked steak and kidneys back to the skillet, along with the thyme, rosemary, sage, black pepper, nutmeg and cloves. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
Once the filling has finished cooking, transfer it to a 9-inch pie dish. Cut the puff pastry sheet into a circle that is slightly larger than the pie dish. Place the pastry over the top of the filling, pressing the edges to seal. Brush the top of the pastry with the beaten egg and cut a few slits in the top of the pastry to allow steam to escape while baking.
Bake the pie in the preheated oven for 45 minutes to 1 hour, or until the pastry is golden brown and the filling is bubbling. Remove the pie from the oven and let it cool for 10 minutes before serving.
