Instructions
To make the cake:
- Preheat oven to 375°F and grease two 9” round cake pans.
- In a mixing bowl, whisk together the cake flour, cocoa powder, baking soda, and salt.
- In a separate bowl, lightly beat the eggs. Add in the buttermilk, vinegar, red food coloring, and vanilla and stir to combine.
- In the bowl of an electric mixer, cream together the sugar and oil until light and fluffy. Slowly add in the egg mixture and mix until combined.
- Add the dry ingredients to the wet ingredients and mix until everything is combined and the batter is smooth.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before carefully turning out onto a cooling rack to cool completely.
To make the frosting:
- In the bowl of an electric mixer, cream together the butter and powdered sugar until light and fluffy.
- Add in the vanilla and enough cream to reach the desired consistency. Beat until everything is combined and the frosting is smooth.
- Spread the frosting between the two cooled cake layers and over the top and sides.
