Instructions
1. To make the dough, mix flour, oil, and salt in a bowl. Slowly add water and knead the dough until it is soft and pliable. Cover and set aside for 15 minutes.
2. To make the filling, mash the boiled potatoes in a bowl. Add ginger, cumin powder, coriander powder, garam masala, red chili powder, cilantro, oil, and salt. Mix everything together and set aside.
3. Divide the dough into 8 equal portions. Take one portion and roll it into a flat disc. Place a spoonful of the potato filling in the center of the disc. Gather the edges together to make a ball. Flatten the ball and roll it out into a disc.
4. Heat a griddle or tawa on medium heat. Place the paratha on the griddle and cook until it is golden brown on both sides.
5. Serve the aloo paratha hot with yogurt, pickles, and chutney.
