Ingredients


For the cake layers:
  • 300g self-raising flour
  • 300g caster sugar
  • 300g unsalted butter, at room temperature
  • 6 large eggs, beaten
  • 3 teaspoons vanilla extract
  • 2–3 tablespoons milk


For the frosting:
  • 500g icing sugar
  • 250g unsalted butter, at room temperature
  • 2–3 tablespoons milk
  • 2 teaspoons vanilla extract

Instructions

Step 1: Make the Cake Layers


Preheat your oven to 200°C/180°C fan/gas 6. Grease and line three 20cm round cake tins with baking parchment.

In a large bowl, beat together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla extract and combine.

Sift in the flour and fold in with a spatula until everything is combined. If the mixture is too dry, add a tablespoon or two of milk.

Divide the mixture evenly between the prepared tins and spread it out evenly. Bake for 25–30 minutes, or until a skewer comes out clean. Leave to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.

Step 2: Make the Frosting


In a bowl, beat together the butter and icing sugar until creamy. Add the vanilla extract and milk and beat until light and fluffy.

Step 3: Assemble the Cake


Place one of the cake layers on a plate or cake stand. Spread a generous amount of frosting on top and repeat with the remaining layers. Spread the frosting over the top and sides of the cake. Decorate with sprinkles, if desired.
