Ingredients
For the pastry:
- 200g (7oz) self-raising flour
- 100g (4oz) shredded suet
- A pinch of salt
- Approximately 5-6 tablespoons cold water
For the filling:
- 2-3 tablespoons raspberry or strawberry jam
- 2-3 tablespoons caster sugar
Instructions
1. Begin by preparing the pastry. Sift the flour into a large bowl, then add the suet and salt. Give the ingredients a good mix together.
2. Next, pour in the cold water, a tablespoon at a time. Use your hands to bring the mixture together until a dough is formed.
3. Tip the pastry onto a lightly floured work surface and roll it out until it is about 2-3 millimeters thick. Cut a large rectangle of pastry, enough to cover the jam filling.
4. Spread the jam over the pastry, followed by the caster sugar. Roll up the pastry like a Swiss roll, then shape it into a round.
5. Place the roly poly onto a greased baking tray. Bake in a preheated oven at 200C (400F) for 25-30 minutes, or until golden brown.
6. Serve warm with custard or cream, and enjoy.
