Good Housekeeping Simnel Cake Recipe
Ingredients
- 200g butter, softened
- 200g caster sugar
- 4 large eggs
- 200g self-raising flour
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 200g mixed dried fruit
- Zest of 1 lemon
- 200g marzipan
- 2 tbsp apricot jam
Instructions
Preheat the oven to 180C/160C Fan/Gas 4. Grease and line a 20cm/8in round springform cake tin.
Using an electric hand whisk, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time and then mix in the flour, baking powder, cinnamon, and dried fruit.
Spoon the batter into the prepared tin and level the surface. Bake for 40-45 minutes, until a skewer inserted into the centre comes out clean. Leave to cool in the tin.
Roll out the marzipan on a lightly floured work surface to a circle the same size as the cake. Cut out a smaller circle from the centre of the marzipan and use the trimmings to make 11 small balls. Place the marzipan circle on top of the cake and arrange the balls around the edge. Brush the marzipan with a little warmed apricot jam.
Return to the oven and bake for a further 15 minutes. Leave to cool before serving.
