- 2 tablespoons of olive oil
- 1 tablespoon of butter
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 1/2 cup of diced celery
- 1/2 cup of diced pineapple
- 1 teaspoon of garlic powder

Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes.
Add the fish fillets to the pan and cook until the fish is cooked through, about 10 minutes. Remove the fish from the pan and set aside. Add the cornstarch mixture to the pan and cook until the sauce has thickened, about 3 minutes. Add the parsley and stir to combine.
