Banoffee Pie is an indulgent and delicious dessert that combines the sweet and creamy flavors of bananas and toffee. It’s a classic British dessert that’s become popular all over the world. This version of the recipe is from BBC Good Food and it’s sure to become a family favorite.
Ingredients
- 200g digestive biscuits
- 100g butter
- 397g can of condensed milk
- 3-4 ripe bananas, sliced
- 100g dark chocolate
- 300ml double cream
Instructions
Start by preheating your oven to 180°C/Gas Mark 4. Line a 23cm springform tin with baking paper. In a food processor, blend the digestive biscuits until they’re a fine crumb. Melt the butter and mix it with the biscuit crumbs. Press the mixture into the bottom of the tin, then bake it for 10 minutes until it’s golden brown.
Next, you’ll need to make the toffee layer. Place the can of condensed milk in a saucepan and fill it with enough water to cover the top. Put the pan on the stove over a medium-high heat and bring it to a simmer. Simmer the milk for around two hours, stirring regularly so it doesn’t catch on the bottom. Once the milk is thick and caramel-colored, take it off the heat and leave it to cool.
Now it’s time to assemble the pie. Spread the cooled toffee over the biscuit base, then arrange the banana slices on top. Melt the dark chocolate in a heatproof bowl over a pan of boiling water, stirring occasionally until it’s melted and smooth. Spread this over the bananas, then leave it to cool and set.
Finally, whip the double cream until it’s thick and spread it over the cooled chocolate. Refrigerate the pie for at least an hour before serving. Enjoy!
