Introduction

Ingredients

-2 tablespoons of all-purpose flour

-1 tablespoon of chopped cilantro

-Salt to taste

-Oil for deep-frying



For the sandwich:

-4 slices of white bread

-2 tablespoons of butter

-1/2 cup of Mint and Coriander Chutney

-1/2 cup of Garlic and Chilli Chutney

-1/2 cup of Green Chutney

Instructions

1. Begin by making the patty. In a large bowl, mash the potatoes until they are smooth. Add the onion, green chillies, cumin powder, coriander powder, garam masala, all-purpose flour, cilantro and salt. Mix until everything is combined. Shape the mixture into small patties.



2. Heat oil in a large pan over medium heat. Once the oil is hot, carefully add the patties to the pan. Fry for about 5 minutes, flipping the patties occasionally until they are golden brown and crisp.



3. To assemble the sandwich, spread butter on one side of each of the slices of bread. Place a patty on one slice of bread, then spread a generous amount of both the mint and coriander chutney and the garlic and chilli chutney. Top with the remaining slice of bread. Press down lightly to compact the sandwich.



4. Heat a griddle or tawa on medium heat. Place the sandwich on the griddle and cook until the bread is slightly toasted and the sandwich is heated through. Serve hot with green chutney.
