Ingredients

This Coffee and Walnut Cake is an excellent choice for a special occasion. It takes a bit of time to make but the end result is well worth it. Instructions

To make the cake, preheat the oven to 180°C/350°F/Gas Mark 4 and lightly grease a 20 cm (8 inch) round cake tin. Cream together the butter and sugar until pale and creamy. Beat in the eggs one at a time and then stir in the flour, baking powder, ground coffee and walnuts. Finally, stir in the milk until you have a smooth batter. Pour the batter into the prepared tin and bake in the oven for 25-30 minutes or until a skewer inserted into the centre of the cake comes out clean. Leave the cake to cool in the tin for 10 minutes and then turn out onto a wire rack to cool completely.

To make the icing, beat together the butter, coffee and icing sugar until smooth. Spread the icing over the cooled cake and sprinkle over the chopped walnuts. Serve the cake with a cup of hot coffee.
