  • 1 tablespoon Chinese black vinegar or balsamic vinegar
  • 1 tablespoon sugar
  • 2 teaspoons Shaoxing wine or dry sherry
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon dried red chili flakes

Additional Ingredients:

  • 1/4 cup roasted peanuts
  • 2 scallions, sliced
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger

Instructions:

1. In a medium bowl, combine the chicken cubes, oil, soy sauce, Shaoxing wine, cornstarch, salt, and white pepper. Stir until the chicken is evenly coated. Let the chicken marinate for 15 minutes.

2. In a small bowl, combine the soy sauce, black vinegar, sugar, Shaoxing wine, sesame oil, cornstarch, and red chili flakes. Stir until the ingredients are combined and the cornstarch is dissolved.

3. Heat a wok or large skillet over high heat. Add the marinated chicken and stir-fry for 3 minutes, or until the chicken is lightly browned. Add the peanuts, scallions, garlic, and ginger. Stir-fry for 2 minutes, or until the vegetables are softened.

4. Add the sauce to the wok and bring to a boil. Reduce the heat to medium-low and simmer for 2 minutes, or until the sauce thickens. Serve hot over steamed rice.
