Vegan Coffee and Walnut Cake
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder

- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup strong brewed coffee, cooled
Instructions
Preheat the oven to 350°F and grease a 9-inch round cake pan. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and cloves. In a separate bowl, cream together the coconut sugar and vegan butter until light and fluffy. In a small bowl, whisk together the almond milk, flaxseed, apple cider vinegar, and vanilla extract. Add the wet ingredients to the sugar and butter mixture and mix until well combined.
Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the walnuts and pour the batter into the greased cake pan. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool for 10 minutes before transferring to a wire rack to cool completely.
