Instructions
Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then beat in the lemon zest and vanilla extract. Add the flour mixture and milk alternately, starting and ending with the flour. Beat until just combined. Stir in the lemon juice. Divide the batter evenly between the two cake pans.
Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
