How To Make Seafood Risotto
Ingredients
Making seafood risotto is a simple and delicious dish that can be made with a few ingredients. To make the perfect seafood risotto, you’ll need the following ingredients: 1 cup of Arborio rice, 1 cup of dry white wine, 1/2 cup of finely chopped onion, 2 tablespoons of olive oil, 4 cups of vegetable broth, 2 tablespoons of butter, 1/2 cup of grated Parmesan cheese, 1/2 pound of cooked, peeled shrimp, 1/2 pound of cooked, shelled clams, 1/4 cup of chopped fresh parsley, and salt and pepper to taste.
Instructions
To start, heat the olive oil in a large saucepan over medium-high heat. Add the onion and cook until it is softened and lightly browned, about 5 minutes. Then, add the Arborio rice and stir to coat it with the oil. Next, add the wine and stir until it is absorbed. Then, add the vegetable broth, one cup at a time, stirring constantly and letting each cup of broth absorb before adding the next. After all of the broth has been added, reduce the heat to medium-low and simmer, stirring occasionally, until the rice is tender and creamy, about 20 minutes.
When the rice is nearly done, stir in the shrimp and clams and cook until they are heated through, about 5 minutes. Then, stir in the butter and Parmesan cheese. Add salt and pepper to taste. Finally, stir in the parsley and serve the risotto hot.
