Chicken And Mushroom Pie Puff Pastry

Ingredients

  • 1 sheet puff pastry
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 200g mushrooms, sliced
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 2 tablespoons plain flour
  • 250ml chicken stock
  • 200g cooked chicken, diced
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons sour cream
  • 1 egg, beaten, for egg wash

Instructions

Step 1



Preheat your oven to 200°C. Place the puff pastry onto a lightly floured surface and roll it out to a 30cm round. Place the pastry into a 20cm pie dish and trim the edges. Prick the base of the pastry with a fork and place it into the fridge to chill.

Step 2



In a large frying pan, melt the butter over a medium-high heat. Add the garlic, onion, mushrooms and thyme and cook for 5 minutes, stirring occasionally. Add the flour and cook for 1 minute, stirring constantly. Gradually stir in the chicken stock and cook for 2 minutes, until the mixture is thick and creamy. Stir in the cooked chicken and Worcestershire sauce and season with salt and pepper.

Step 3



Remove the pastry from the fridge and spread the chicken and mushroom mixture into the pastry shell. Dollop the sour cream over the top and spread it out with the back of a spoon. Brush the edges of the pastry with the beaten egg. Bake in the preheated oven for 25 minutes, until the pastry is golden brown and the filling is bubbling.

Step 4



Remove the pie from the oven and let it cool for 10 minutes before serving. Enjoy!
