Instructions

Step 1: Preparing the Chicken

Begin by prepping the chicken. Start by removing any giblets or fat from the cavity of the chicken. Then rinse and pat dry the chicken with paper towels. Rub the chicken with salt and pepper, then place it on a greased baking sheet. Roast in a preheated oven at 350°F (180°C) for about 1 hour and 15 minutes. Once cooked through, remove the chicken and set aside to cool.

Step 2: Preparing the Rice

In a large pot, heat 2 tablespoons of cooking oil over medium heat. Add the onion, ginger, and garlic and sauté until fragrant. Then add the rice and toss to combine. Add the soy sauce, sesame oil, chicken stock, oyster sauce, and Shaoxing wine to the pot and stir to combine. Bring the mixture to a boil, reduce the heat to low and simmer for 15 minutes. Fluff the rice with a fork and set aside.

Step 3: Assembling the Dish

To assemble the dish, cut the chicken into small cubes and place it on top of the steamed rice. Drizzle some of the cooking liquid over the chicken and rice. Serve with a side of chili sauce and cucumber slices.
