Almond Ricotta Olive Oil And Lemon Drizzle Cake

Ingredients

This Almond Ricotta Olive Oil And Lemon Drizzle Cake is an easy and delicious recipe that is sure to be a hit with your family and friends. To make this delectable dessert, you will need the following ingredients:

  • 200g ground almonds
  • 200g caster sugar
  • 3 large eggs, lightly beaten
  • 200g ricotta cheese
  • 2 tablespoons of olive oil
  • 1 teaspoon of vanilla extract
  • Zest of 1 lemon (plus extra for drizzle)
  • 2 tablespoons of lemon juice
  • ½ teaspoon of baking powder
  • Pinch of salt

Instructions

Preheat the oven to 180°C/gas mark 4 and lightly grease a 20cm/8inch round cake tin with some of the olive oil. Place the ground almonds, caster sugar and eggs into a large bowl and mix together until combined. Add the ricotta, olive oil, vanilla extract, lemon zest and juice to the mixture and mix until all of the ingredients are well combined. Finally, add the baking powder and salt and mix until everything is evenly distributed.

Pour the cake mixture into the prepared cake tin and bake in the preheated oven for 25-30 minutes until golden brown and a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave to cool for 10 minutes before transferring to a wire rack to cool completely.

Once the cake is cooled, prepare the drizzle. Mix together the remaining lemon zest, lemon juice and caster sugar until a thick syrup is formed. Drizzle the syrup over the top of the cake and leave to set before serving.
