Ingredients

300g unsalted butter, softened, plus extra for greasing
300g caster sugar
6 large eggs, beaten
2 teaspoons vanilla extract
240g plain flour
2 teaspoons baking powder
2 tablespoons milk
500ml double cream
50g icing sugar
2 tablespoons raspberry jam
Instructions
1. Preheat the oven to 180°C/160°C fan/Gas 4. Grease four 20cm sandwich tins and line the bases with baking parchment.
2. Put the butter and sugar in a large bowl and beat together until light and creamy. Gradually add the eggs, beating well after each addition, then stir in the vanilla extract.
3. Sift the flour and baking powder into the mixture and fold in until evenly combined. Add the milk and stir until smooth.
4. Divide the mixture between the tins and level the surfaces. Bake for 25–30 minutes, or until golden-brown and a skewer inserted into the centre comes out clean. Leave in the tins for 10 minutes before transferring to a wire rack to cool completely.
5. Whip the cream and icing sugar together until soft peaks form. Spread half of the cream over the top of one of the cakes, then top with the second cake. Spread the remaining cream over the top and sides of the cake. Heat the raspberry jam in a pan until it is runny, then brush over the top of the cake. Top with the remaining two cakes.
