No Bake Easter Mini Egg Cheesecake
Ingredients
Making this delicious Easter Mini Egg cheesecake is easy and only requires a few ingredients. To make this cheesecake, you will need:
- 100g butter
- 200g digestive biscuits
- 500g cream cheese
- 150ml double cream
- 90g icing sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 150g Mini Eggs
Instructions
Once you have all your ingredients ready, you can start making this delicious Easter cheesecake. To begin, preheat your oven to 175C/350F/Gas mark 4. Line a baking tray with baking paper. Place the butter, digestive biscuits and Mini Eggs in a bowl and mix together until combined. Press the mixture into the baking tray and bake in the preheated oven for 10 minutes. Remove from the oven and allow to cool. In another bowl, place the cream cheese, double cream, icing sugar, lemon juice, and vanilla extract and mix together until combined. Place the mixture over the cooled biscuit base and spread evenly using a spatula. Sprinkle the remaining Mini Eggs over the cheesecake mixture and place in the fridge for 2 hours to set. Once the cheesecake is set, you can remove from the tin and enjoy!
