Jamie Oliver Seafood Risotto Recipe

Ingredients

This delicious seafood risotto is a perfect midweek meal. Jamie Oliver’s recipe is sure to be a hit with the whole family. To prepare it you will need:

  • 2 tablespoons of olive oil
  • 2 cloves of garlic, peeled and finely chopped
  • 1 onion, peeled and finely chopped
  • 2 sticks of celery, finely chopped
  • 1/2 teaspoon of dried chilli flakes
  • 1 teaspoon of fennel seeds, lightly crushed
  • 2 tablespoons of tomato puree
  • 400g risotto rice
  • 1 litre of vegetable stock
  • 100g of frozen peas
  • 400g of mixed seafood, such as mussels, clams, squid and prawns
  • 50g of Parmesan cheese, grated
  • A handful of fresh parsley, finely chopped

Instructions

To make this seafood risotto, begin by heating the oil in a large saucepan over a medium heat. Add the garlic, onion, celery, chilli flakes and fennel seeds and fry for 4-5 minutes. Stir in the tomato puree and fry for 1 minute more.

Pour in the risotto rice and stir to coat in the oil, then add the stock. Bring to the boil, then reduce to a simmer and cook for 15 minutes, stirring occasionally. Add the frozen peas and the mixed seafood and cook for a further 5 minutes, or until the seafood is cooked.

Remove the pan from the heat and stir in the Parmesan cheese and parsley. Serve the risotto in warm bowls with a sprinkle of extra Parmesan cheese and a drizzle of olive oil. Enjoy!
