Ingredients:



- 1 package of extra firm tofu
- 1 tablespoon of vegetable oil

- 2 tablespoons of Sichuan peppercorns
- 2 tablespoons of fermented bean paste
- 2 tablespoons of soy sauce
- 2 tablespoons of chili oil
- 2 tablespoons of sesame oil
- 2 tablespoons of Shaoxing wine
- 2 tablespoons of sugar
- 2 tablespoons of cornstarch
- 2 tablespoons of water
- Salt to taste
- 2 green onions, finely chopped

Instructions:



1. Start by draining the tofu and pressing it lightly between two paper towels to remove any excess moisture. Cut the tofu into cubes and set aside.

2. Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and ginger and cook for 1 minute. Add the Sichuan peppercorns and cook for another minute.

3. Add the fermented bean paste, soy sauce, chili oil, sesame oil, Shaoxing wine, sugar, and salt to taste. Stir to combine and cook for 1 minute.

4. Add the cubed tofu to the skillet and cook for 2-3 minutes, stirring occasionally.

5. In a small bowl, whisk together the cornstarch and water until combined. Add the cornstarch mixture to the skillet and stir to combine. Cook for 1 minute until the sauce thickens.

6. Turn off the heat and stir in the chopped green onions.

7. Serve the Easy Vegetarian Mapo Tofu over rice or noodles. Enjoy!
