Instructions:
1. Start by draining the tofu and pressing it lightly between two paper towels to remove any excess moisture. Cut the tofu into cubes and set aside.
2. Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and ginger and cook for 1 minute. Add the Sichuan peppercorns and cook for another minute.
3. Add the fermented bean paste, soy sauce, chili oil, sesame oil, Shaoxing wine, sugar, and salt to taste. Stir to combine and cook for 1 minute.
4. Add the cubed tofu to the skillet and cook for 2-3 minutes, stirring occasionally.
