Chicken with Peppercorn Sauce is a delicious and easy-to-make dish that is perfect for a weeknight dinner. This recipe is simple yet packed with flavor, thanks to the peppercorn sauce that is made with cream and butter. Ingredients

For the marinade:

- 2 tablespoons of olive oil

- 2 cloves of garlic, minced

- 1 teaspoon of lemon zest

- 2 tablespoons of fresh thyme leaves

- 1 teaspoon of salt

- 1 teaspoon of freshly ground black pepper

For the chicken:

- 4 boneless, skinless chicken breasts

- 2 tablespoons of butter

- 2 tablespoons of all-purpose flour

For the sauce:

- 1/2 cup of heavy cream

- 1/4 cup of green peppercorns

- 2 tablespoons of butter

- 2 tablespoons of freshly squeezed lemon juice

- 2 tablespoons of fresh parsley, minced

- Salt and freshly ground black pepper, to taste

Instructions

1. Start by preparing the marinade. In a bowl, combine the olive oil, garlic, lemon zest, thyme, salt, and pepper. Stir to combine and then add the chicken breasts to the marinade. Turn the chicken to coat, cover the bowl with plastic wrap, and place in the refrigerator to marinate for at least 30 minutes.

2. Once the chicken has finished marinating, heat a large skillet over medium-high heat and add the butter. Once the butter has melted, add the chicken and cook for about 5 minutes per side, or until golden and cooked through. Remove the chicken from the skillet and set aside.

3. To make the sauce, reduce the heat to medium and add the flour to the skillet. Stir to combine and cook for about 1 minute. Slowly add the cream, stirring constantly, and cook for another minute. Add the peppercorns, butter, lemon juice, and parsley and stir to combine. Simmer the sauce for about 5 minutes, or until it has thickened.

4. Add the chicken back to the skillet and simmer for another 5 minutes. Taste and adjust the seasoning, if necessary. Serve the chicken with the sauce spooned over the top and enjoy!
