Instant Pot Vegan Shepherd's Pie

Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced

- 1 teaspoon smoked paprika

- 1/4 teaspoon sea salt
- 3 cups cooked lentils or 2 (15-ounce) cans cooked lentils, drained and rinsed
- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can vegetable broth
- 1/2 cup frozen peas
- 1/4 cup nutritional yeast
- 1/4 cup freshly chopped parsley
- 3-4 cups mashed potatoes (see note)
Instructions
Instant Pot
- Set the Instant Pot to the sauté setting and heat the oil. Add the onion and garlic and sauté for 2 minutes until fragrant. Add the carrots and celery and cook for 4-5 minutes, stirring occasionally.
- Add the thyme, paprika, pepper, and salt, and stir to combine. Add the lentils, tomatoes, broth, and frozen peas and stir to combine. Place the lid on the Instant Pot, seal the valve, and set the timer for 10 minutes.
- When the timer is done, let the pressure release naturally for 10 minutes, then quick release the remaining pressure. Carefully remove the lid and stir in the nutritional yeast and parsley.
- Preheat the oven to 375°F (190°C). Spoon the mixture into a 9x13-inch baking dish. Spread the mashed potatoes evenly over the top of the mixture. Bake for 25-30 minutes until the potatoes are golden brown.
- Remove from the oven and let cool for 10 minutes before serving. Enjoy!
