Ingredients

This delicious recipe for a Cornish Cheese And Onion Pasty is a classic for a reason. It’s a great combination of savoury cheese, sweet onion and a hint of oregano all wrapped up in a comforting pastry. To make your own, you’ll need:

  • 500g puff pastry
  • 3 large onions, peeled and finely chopped
  • 50g butter
  • 200g grated cheddar cheese
  • 1 tablespoon of fresh oregano, chopped
  • 1 egg, beaten
  • Salt and pepper, to taste
  • Milk, for brushing

Instructions

Start by pre-heating your oven to 200C/Gas Mark 6. Meanwhile, melt the butter in a large saucepan over a medium heat. Once melted, add the chopped onions and cook them until they’re soft and golden brown. This should take about 10 minutes.

Once the onions are cooked, take the pan off the heat and leave them to cool. Then, roll out the puff pastry on a lightly floured surface until it’s about 3mm thick. Cut out four circles of pastry, each about 15cm in diameter. Place the circles on a lined baking tray.

Divide the cooled onions between the four pastry circles. Sprinkle the grated cheese and oregano over the top. Then, brush the edges of the pastry with a little of the beaten egg. Fold the pastry in half and press down the edges to seal them.

Brush the pasties with a little more of the beaten egg, then make a small cut in the top of each one to allow the steam to escape. Bake them in the pre-heated oven for 25-30 minutes, or until the pastry is golden brown. Serve the pasties hot or cold, with a salad or chips, as you prefer.
