- 1 teaspoon of turmeric powder
- 1 teaspoon of red chilli powder
- 1 teaspoon of amchoor powder (dried mango powder)

- 1 teaspoon of sugar
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/4 cup of oil
- 1/2 cup of warm water
- Oil for deep-frying
Instructions
Making the chole:
Soak the chickpeas in water overnight. Drain the water and set the chickpeas aside.
In a large pot, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the onions and fry for a few minutes until they are lightly browned. Add the green chillies and fry for a few more minutes.
Add the coriander powder, garam masala, turmeric powder, red chilli powder, amchoor powder and salt. Stir to combine and fry for a few minutes. Add the tomatoes and fry for a few more minutes.
Add the soaked chickpeas and stir to combine. Add enough water to cover the chickpeas and bring to a boil. Reduce the heat to low and simmer for about 30 minutes, stirring occasionally, until the chickpeas are cooked through. Add the chopped coriander leaves and stir to combine.
Making the bhature:
In a large bowl, mix together the flour, sugar, baking powder, salt and oil. Add the warm water and mix until a soft dough forms. Knead the dough for a few minutes until it is smooth and pliable. Cover the bowl with a damp cloth and let the dough rest for at least 30 minutes.
Divide the dough into 12 equal portions. Roll each portion into a ball and flatten it slightly. Using a rolling pin, roll each ball into a thin round disc. Heat oil in a deep-frying pan over medium-high heat. Gently slide the bhature into the hot oil and fry for a few minutes until golden brown. Remove the bhature from the oil and drain on paper towels.
