Nigella’s Best Lemon Drizzle Cake Recipe
Ingredients:
- 200g of butter, softened (plus a little extra for greasing the tin)
- 200g of caster sugar
- 4 large eggs
- 200g self-raising flour
- 3 tablespoons of freshly-squeezed lemon juice
- 2 tablespoons of freshly-grated lemon zest
- 2 tablespoons of milk
- 100g of granulated sugar
Instructions:
- Preheat the oven to 180 degrees C (160 fan) and grease a 20cm springform cake tin.
- Cream the butter and caster sugar together in a bowl until light and fluffy.
- Add in the eggs, one at a time, mixing them in until fully incorporated.
- Sift in the flour, lemon zest and juice and milk and fold everything together until you have a smooth cake batter.
- Pour the batter into the prepared tin and bake for 25 minutes or until a skewer inserted into the centre comes out clean.
- Mix the granulated sugar and lemon zest together in a bowl and sprinkle it over the top of the cake.
- Bake for a further 5 minutes, then remove from the oven and leave to cool in the tin.
- Once cool, remove the cake from the tin and serve with a dollop of cream or a scoop of ice cream.
