Nigella’s Best Lemon Drizzle Cake Recipe



Nigella Lawson’s Best Lemon Drizzle Cake is a light, soft and moist cake that has the perfect balance of sweet and tartness. It is a classic dessert that is enjoyed by everyone and is the perfect end to a meal. From the bright and zesty lemony flavour to the crunchy sugar topping, this cake is simply irresistible. Ingredients:

  • 200g of butter, softened (plus a little extra for greasing the tin)
  • 200g of caster sugar
  • 4 large eggs
  • 200g self-raising flour
  • 3 tablespoons of freshly-squeezed lemon juice
  • 2 tablespoons of freshly-grated lemon zest
  • 2 tablespoons of milk
  • 100g of granulated sugar

Instructions:

  1. Preheat the oven to 180 degrees C (160 fan) and grease a 20cm springform cake tin.
  2. Cream the butter and caster sugar together in a bowl until light and fluffy.
  3. Add in the eggs, one at a time, mixing them in until fully incorporated.
  4. Sift in the flour, lemon zest and juice and milk and fold everything together until you have a smooth cake batter.
  5. Pour the batter into the prepared tin and bake for 25 minutes or until a skewer inserted into the centre comes out clean.
  6. Mix the granulated sugar and lemon zest together in a bowl and sprinkle it over the top of the cake.
  7. Bake for a further 5 minutes, then remove from the oven and leave to cool in the tin.
  8. Once cool, remove the cake from the tin and serve with a dollop of cream or a scoop of ice cream.
