- 175g (6oz) butter, softened
- 175g (6oz) caster sugar
- 3 large eggs, beaten

Instructions
Preheat the oven to 170°C (150°C fan, gas mark 3), and grease and line a 900g (2lb) loaf tin. Place the butter and sugar in a bowl and beat until light and fluffy. Gradually beat in the eggs. Sift the flour and baking powder into the bowl, and add the milk, lemon zest and juice. Beat until all the ingredients are combined into a smooth batter.
Pour the mixture into the prepared tin and bake in the oven for 40-45 minutes until golden brown and a skewer inserted into the centre of the cake comes out clean. Allow the cake to cool slightly in the tin before turning out onto a wire rack.
Meanwhile, make the drizzle topping by combining the lemon juice and icing sugar in a bowl. Mix until smooth and creamy. Once the cake has cooled, pour the drizzle topping over the cake, allowing it to run down the sides. Allow to cool completely before serving.
