Gluten Free Simnel Cake Mary Berry



Simnel cake has been a traditional Easter favorite for centuries, and this gluten-free version of the classic recipe by Mary Berry is sure to become a family favorite. The cake is moist and flavorful, and the topping of marzipan gives it a special Easter touch. This recipe is perfect for those who are gluten-free and can be easily modified to make it dairy-free as well.

Ingredients

  • 175g (6 oz) butter, softened
  • 175g (6 oz) caster sugar
  • 3 large eggs
  • 225g (8 oz) gluten-free self-raising flour
  • 2 teaspoons gluten-free baking powder
  • Grated zest of 1 lemon
  • 1 teaspoon ground cinnamon
  • 175g (6 oz) dried mixed fruit
  • 50g (2 oz) flaked almonds
  • 50g (2 oz) chopped mixed peel
  • 3 tablespoons milk
  • 2 tablespoons apricot jam
  • 225g (8 oz) marzipan

Instructions

Preheat the oven to 180°C/fan 160°C/gas 4. Grease and line a 20cm (8 inch) round cake tin with baking paper.

Cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, sifting in the gluten-free flour and baking powder as you go.

Stir in the lemon zest, cinnamon, dried fruit, almonds, mixed peel and milk until everything is combined.

Spoon the mixture into the prepared tin, making sure it is evenly spread. Bake in the preheated oven for 45–50 minutes until golden brown and a skewer inserted into the centre comes out clean.

Once the cake is cooled, heat the apricot jam until it is runny, then brush it over the cake. Roll out the marzipan and cut out a 20cm (8 inch) circle. Place it on top of the cake and press down lightly. Decorate with flaked almonds and bake for a further 10 minutes.

Allow the cake to cool before serving. Enjoy!
