Ingredients

Instructions
To begin, wash and soak the rice for about 15 minutes. Heat the ghee in a deep pan and add the chopped onion. Cook the onion until it is golden brown. Add the minced garlic, ginger and cumin seeds. Cook for a few minutes and then add the mixed vegetables. Cook for a few minutes and then add the coriander powder, turmeric powder, chilli powder, garam masala and salt.
Add the soaked rice and mix well. Pour in 2 cups of water and bring to a boil. Reduce the heat to low and simmer for 15-20 minutes or until the rice is cooked. Once the rice is cooked, turn off the heat and fluff the rice with a fork. Add the chopped fresh coriander and mint leaves.
