Fatima Sydow Malva Pudding Recipe

Ingredients

This classic South African dessert is so popular it is often referred to simply as malva pudding. You’ll need the following to make the Fatima Sydow Malva pudding:

  • 225g butter
  • 4 eggs
  • 2 cups white sugar
  • 2 tablespoons apricot jam
  • 2 tablespoons vinegar
  • 1 cup cake flour
  • 1 teaspoon bicarbonate of soda
  • 2 tablespoons hot water
  • 1 teaspoon vanilla essence
  • 1 tablespoon butter
  • 3 cups boiling water
  • Custard or ice cream to serve

Instructions

Preheat the oven to 180°C (350°F). Grease a baking dish with butter and set aside. Cream the 225g of butter and the sugar until light and fluffy. Beat in the eggs one at a time and stir in the apricot jam. Sift together the flour and bicarbonate of soda, then add to the creamed mixture.

In a small bowl, mix the vinegar with the hot water and stir into the pudding mixture. Finally, add the vanilla essence and pour into the prepared baking dish. Bake for 40 minutes, or until a knife inserted into the middle comes out clean. While the pudding is baking, prepare the sauce.

In a pot, melt the tablespoon of butter and add the boiling water. Bring to the boil, stirring constantly. Once boiling, reduce the heat and simmer for 8–10 minutes. Once the pudding is cooked, pour the sauce over it and serve with custard or ice cream. Enjoy!
