- 1 teaspoon of sugar
- Salt to taste
- Water, as required
Instructions
To make the chole:
1. Heat the oil in a pan over medium heat.
2. Add the cumin seeds and allow them to crackle.
3. Add the chopped onions and fry until they are lightly browned.
4. Add the chopped tomatoes and green chillies and cook for a few minutes.
5. Add the boiled chickpeas and mix well.
6. Add the coriander powder, garam masala, red chilli powder and salt to taste.
7. Cook for 5-10 minutes, stirring occasionally.
8. Remove from heat and set aside.
To make the bhatura:
1. Combine the plain flour, yoghurt, oil, baking powder, sugar and salt in a bowl.
2. Gradually add water and knead into a soft dough.
3. Cover the dough with a damp cloth and set aside for 30 minutes.
4. Divide the dough into small portions and roll them into balls.
5. Flatten the balls and roll them into thin circles.
6. Heat oil in a deep pan and deep fry the bhaturas until they are golden brown and crisp.
7. Remove from heat and set aside.
Serving
To serve the Chole Bhature, place the bhatura on a plate and top with the spicy chole. Serve hot with a side of onion slices and lemon wedges.
