Baked Potato with Chilli Con Carne
Ingredients
For this delicious and comforting dish, you’ll need 4 tablespoons of oil, 2 onions, 2 garlic cloves, 500g of minced beef, 2 tablespoons of tomato puree, 2 tablespoons of mild chilli powder, 2 teaspoons of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of oregano, 1 beef stock cube, 400g of tinned red kidney beans, 250ml of beef stock, 2 large baking potatoes and some grated cheese for topping.
Instructions
To start, preheat your oven to 180C/350F/gas mark 4. Then heat the oil in a large saucepan over a medium-high heat, add the onion and garlic and fry until softened. Add the mince and fry until it’s browned all over. Add the tomato puree, chilli powder, cumin, paprika and oregano and cook for a few minutes. Mix in the stock cube, beans and beef stock, bring to the boil and simmer for 15 minutes. Meanwhile, prick the potatoes all over with a fork, rub with a little oil and season with salt. Place the potatoes on a baking tray and bake in the oven for 45-50 minutes, until they’re cooked through and golden brown. Once the chilli con carne is cooked, spoon it into the baked potato and top with some grated cheese. Serve with a dollop of sour cream and some chopped spring onions.
