Recipe For A Coffee And Walnut Cake
Ingredients:
This delicious coffee and walnut cake is the perfect choice for a special occasion. All you need is:
- 175g softened butter
- 175g light muscovado sugar
- 3 medium eggs
- 175g self-raising flour, sifted
- 2 tsp instant coffee granules
- 2 tbsp milk
- 100g walnut pieces
- For the icing:
- 225g icing sugar, sifted
- 3-4 tsp instant coffee granules
- 3-4 tsp boiling water
- 50g butter, melted
- 2-3 tbsp milk
- 25g walnut pieces, chopped
Instructions:
Begin by preheating the oven to 180°C, gas mark 4. Grease and line a 20cm round cake tin.
Using an electric mixer, beat together the butter and sugar until creamy. Beat in the eggs one at a time, adding a tablespoon of the flour with the last egg to prevent the mixture from curdling.
Stir in the rest of the flour, the coffee granules dissolved in the milk, and the walnut pieces. Spoon the mixture into the tin and level the surface.
Bake in the preheated oven for 25 minutes or until golden and springy to the touch. Turn out onto a wire rack to cool.
To make the icing, mix the icing sugar and coffee granules together in a bowl and add the boiling water, melted butter, and milk. Beat until smooth, then stir in the chopped walnut pieces.
Spread the icing over the top and sides of the cake and leave to set.
