  • 1/2 onion, diced
  • 1 bell pepper, diced

Instructions

In a medium bowl, combine the chicken, soy sauce, sesame oil, and cornstarch. Mix until the chicken is evenly coated. Set aside.

In a small bowl, whisk together the rice vinegar, sugar, garlic, ginger, chili paste, and water. Set aside.

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken and stir-fry for about 5 minutes, or until the chicken is cooked through. Add the onion and bell pepper and continue cooking for another 3 minutes.

Add the peanut, and then pour in the sauce. Cook, stirring constantly, until the sauce has thickened, about 3 minutes. Remove from heat and serve immediately.
